cilantro rice (arroz verde)

ingredients: Loma, 2 cups long grain rice, 3 cups water, 2 1/2 tbsp of vegetable oil, 3/4 tsp salt

Serves 4-6 people

  • heat half of the oil and all of the salt in a cast iron or aluminum pot 
  • add the water (careful of oil splatter)
  • once water begins to boil, add the rice
  • stir regularly to avoid sticking
  • when all the water has evaporated cover the pot with a tight fitting lid and simmer over very low heat for 15 minutes
  • add 4 tablespoons of Loma and the remaining oil 
  • stir the rice and cover again for 5 minutes
  • remove the lid. rice should be firm, but tender
  • serve as a side with your choice of meat or fish or mix with ground turkey or beef for a rice bowl
