ingredients: Loma, 2 cups long grain rice, 3 cups water, 2 1/2 tbsp of vegetable oil, 3/4 tsp salt
Serves 4-6 people
heat half of the oil and all of the salt in a cast iron or aluminum pot
add the water (careful of oil splatter)
once water begins to boil, add the rice
stir regularly to avoid sticking
when all the water has evaporated cover the pot with a tight fitting lid and simmer over very low heat for 15 minutes
add 4 tablespoons of Loma and the remaining oil
stir the rice and cover again for 5 minutes
remove the lid. rice should be firm, but tender
serve as a side with your choice of meat or fish or mix with ground turkey or beef for a rice bowl
