Kale Chicken salad

ingredients: Loma, chicken breast, kale, quick pickled onions, parmesan cheese, cooking oil
  • place chicken breast in a resealable/reusable bag like this
  • add one tablespoon of Loma per chicken breast
  • let chicken marinate for 15+ minutes (or overnight)
  • while chicken is marinating, wash kale 
  • massage kale in a bowl of ice cold water
  • spin dry or drain water and put kale to the side to dry
  • heat oil-coated skillet to medium-high heat
  • cook chicken for 5-7 minutes on one side before flipping. option to drizzle more Loma for added flavor
  • cook other side for another (5-7 minutes depending on thickness)
  • let chicken sit for 5 
  • in a large bowl combine kale, pickled onions and parmesan cheese. 
  • drizzle dressing of your choice (we prefer a lemon-y, balsamic vinegar & olive oil based dressing)
  • plate chicken over salad and serve
